Hi, my name is Aston. During the summer months I run my catering business. 

But in the winter I go back to my roots in the mountains and cook healthy breakfasts
and intimate dinners in ski chalets.

Roasted Fig and Goats Cheese Salad with Truffle Honey, Walnut and Balsamic

Deconstructed Coq au Vin with Honey Glazed Shallots, Bacon Crisp, Stuffed Mushroom,
'Potatoes Duchess' and Seasonal Greens

Day 2

A Selection of Wild Mushroom on Toasted Brioche with a Creamy Brandy Sauce

Fillet of Cod served with Balsamic Braised Cherry Tomatoes, Roasted Chorizo, Courgette Crisps.
Accompanied with Sweet Potato Purée and a Light Fennel Sauce

Chocolate Fondant with a Brandy Snap a Salted Caramel Ice Cream

Day 3

Roasted Beetroot Risotto, with Smoked Salmon and a Rocket Salad

Fillet of Beef with a Madeira and Foie Gras Cream Sauce,
Celeriac Pureé and Roasted Seasonal Vegetables

White Chocolate and Raspberry Cheesecake

Day 4

Smoked Mackerel and New Potato Salad accompanied with Pickled Radish and Cucumber,
Red Onion and a Selection of Fresh Herbs

Pan Fried Duck Breast, with Candied Parsnip, Sauteéd Potatoes, Port and Winter Berry Jus
with a Shot of French Peas on the Side

Chestnut and Orange Mousse with a Burnt Italian Meringue and a Chocolate Cigar

Day 5

Red Pepper and Spiced Sweet Potato Soup with a Pesto Crouton

8 Hour Slow Roasted Crispy Pork Belly on a Bed of Braised Red Cabbage
with Crushed Roast Potato Seasonal Vegetables and Port and Thyme Jus

Pears Poached in Red Wine, Winter Spices and Maple Syrup with
Thyme and Orange Mascarpone

Day 6

Seared Scallops with Pickled Apple and Bacon Jam

Confit Leg of Lamb with Sundried Tomato and Basil served with
Spinach and Watercress Pearl Barley

Chocolate Salted Tarte with Vanilla Crème Fraiche
